Lemon Tahini Dressing
This dressing is so delicious! Use it on salad, vegetables, brown rice, soba noodles or beans! Tahini is a creamy paste made of crushed, sesame seeds and great non-‐dairy way to get your CALCIUM. Look for it with other nut butters or Middle Eastern foods.
Ingredients:
½ cup tahini
¼ cup extra virgin olive oil
Juice of 1½ -‐ 2 lemons
1 clove garlic
2 teaspoons tamari or shoyu
Pinch of cayenne
¾ cup water
Place all ingredients except water in a blender or processor; blend until smooth. Add enough water to get desire consistency. Allow mixture to set for a half hour if possible to allow flavors to meld. Taste for salt and add more tamari if needed. Sauce will keep in refrigerator for 10 to 14 days.
Quicker & Easier version:
½ cup Tahini
Juice of 1½ -‐ 2 lemons
1-‐2 Tbsp of water
(to desired consistency)Mix together in bowl.
